Chicken cari (curry) recipe

A chicken curry that’s easy to make

Chicken curry is one of the most familiar dishes in Reunion cuisine. Very easy to make. Choose a farmhouse chicken.
The tomato version is the most widespread and the best known, but traditionally it was prepared without tomatoes.

Chicken curry ingredients for 4 people:
  • one 1.2kg chicken
  • 2 medium onions
  • 4 cloves of garlic
  • 4 small tomatoes
  • a small piece of ginger
  • a sprig of thyme
  • 1/2 teaspoon of turmeric
  • salt, pepper, to season
  • frying oil
Steps for making chicken curry:
  1. Cut the chicken into 8 or 10 pieces
  2. Finely chop the onions and tomatoes
  3. Crush the salt, pepper, garlic and ginger together
  4. Sauté the chicken pieces in very hot oil
  5. When they are nice and golden (the fried chicken can actually be eaten at this stage), add the onions. Stir continuously for a minute.
  6. Add the onions and the crushed mixture, mix well for 2 minutes
  7. Add the tomatoes and thyme, mix well for 2 minutes
  8. Add the turmeric, half-fill with water and turn down the heat when it starts to boil
  9. Leave to simmer gently for 15 mins
The sauce should not be too runny or too thick. You can degrease once it’s finished cooking (remove some of the oil)
Serve with white rice and dry grains (kidney beans, lentils)
