Rougail sausage

recette rougail saucisses

Preparation and cooking time: 45 mins

  • 6 big sausages or 12 medium sized
  • 300g onions
  • salt
  • 500g tomatoes
  • 3 tablespoons of olive oil
  • chilli pepper

Steps for making rougail sausages:

If the sausages are not too salty, boil them once. Otherwise, repeat this step two or three times, pricking them with a fork (5 mins).
Rinse. Cook the sausages for 10 minutes in a small amount of water until the water evaporates completely.
Fry the sausages in the oil. Add the chopped onions. Mix well, then add the crushed chilli and salt. Brown well.
Add the chopped tomatoes
Cover and leave to simmer for 15 to 20 minutes
At the end of this time, the rougail sauce should be thick and the onions and tomatoes well cooked.
Eat with rice. A real treat!
