  • The restaurant at the Blue Margouillat hotel serves international cuisine with jazz music playing in the background. The gourmet à la carte dinner is served by candlelight around the pool or under the veranda.

    Dishes are prepared with fresh produce and gently seasoned with local spices such as turmeric, coriander, cinnamon or ginger and exotic flavours. Three wine lists ("the Classics", "Good Hope" and "Exceptional") as well as a list of champagnes (Blue Margouillat "Bubbles") give the clear Creole nights an openness that is found only in the tropics. There is an extensive list of teas and coffees, "Epicures", liqueurs and after dinner drinks, including the famous "rhum arrangé" and a cigar cellar opens up to reveal its wonders.
    Every afternoon between 3pm and 6pm "Afternoon Tea" is served at the bar or around the pool so you can enjoy the panoramic views.
    The restaurant is open every evening and for Sunday lunch. Capacity: 30 covers
