The traveller basks in the sun on the beaches of the west coast, to end the evening facing an unforgettable sunset, a cocktail in hand and their feet in the water.

Chilling in a bohemian atmosphere and enjoying the present intensely is the promise of Détente Péi.

The cocktail recipe

Glass: Hurricane

The ingredients

    Base

    • 3 cl Pei lemon and passionfruit sherbet
    • 4 cl Tangor or mandarin juice
    • 3 cl Pineapple juice
    • 3 cl Savanna Intense rum

    Float

    • 3 cl Sublim’ pineapple, La Part des Anges with blue spirulina

    Preparing the pei lemon and passionfruit sherbet

    • 2 Pei lemons
    • 4 Passionfruit
    • 300 g white sugar 10 cl water

    1. Oleo Saccharum

    Rinse the lemons with water then dry them. Scrape the zest from the lemons, avoiding the pith as much as possible.

    Crush the zest with the sugar, to release the essential oils.

    Leave aside for 12 hours.

    2. Sherbet

    Squeeze the juice from the lemons

    Separate the juice from the passionfruit seeds

    Add the juices to the oleo saccharum

    Mix together until the rest of the sugar is dissolved

    Add water

    Double filter

    Put into a bottle

    Keep chilled.

    Preparation time : 5 min

    Leave aside for 12 hours.

    Finishing touches : 15 minutes
