An easy recipe to follow for a Christmas or New Year dinner
Duck stew has a richer sauce and a stronger taste. This tasty duck stew flavoured with cloves is served with white rice and beans.
Recipe for duck stew
Preparation time 30 minutes
Cooking time 1 1/2 HOURS
Ideally, marinade the duck pieces overnight in the wine and spices (add the onion and thyme to the crushed garlic, ginger, salt, pepper and cloves). After a night in the refrigerator, it will taste excellent !
Drain the duck pieces and put the wine and spices (onions, garlic, ginger, cloves, etc.) to one side.
Finely chop the spring onions and parsley.
Seal the drained duck pieces in very hot oil.
When they’re nicely browned, add the spices and fry gently.
Add the thyme, and keep moist by adding the wine little by little.
Simmer gently for one hour,
Then add the spring onions and parsley.
After an hour, you should have a creamy sauce.
a 2kg duck
1/2 bottle red wine
6 garlic cloves
Piece of ginger
1 sprig thyme
oil, salt & pepper
bunch of parsley
Stews can be made with or without tomatoes, according to taste.
