At Christmas, here are some traditional dishes you can find on Reunionese tables: Creole pâté, curries (lobster curry, goose civet, turkey civet...), along with rice, broad beans and mango rougail, Christmas log, lychis and other fruit.

Recipe for Creole pâté

Ingredients : 1kg flour, 3 eggs, 3 egg whites, 1 sachet of yeast , 1 bag of vanilla flavoured sugar, 250g lard, 1 pork curry, 100g sugar, liquor (Marie-Brizard or anisette)

  • Mix 1kg flour, 3 eggs, 3 egg whites, 1 sachet of yeast, 1 bag of vanilla flavoured sugar, 250g lard, 100g sugar,  liquor
  • Perfume and colour the dough with oil from pork curry
  • Mix well
  • Spread half the mix out on an oven plate
  • Place pieces of meat from the curry on top
  • Cover the contents with the other half of the dough
  • Decorate with any leftovers from the dough mix and glaze over with egg yolk
  • Cook in oven for 45 minutes at 180°C


Recipe for Lobster Curry

Ingredients : 8 lobster tails, 4 onions, 5 tomatoes, garlic, ginger, saffron, salt, pepper, cooking oil, thyme. Combava and chilli peppers are optional.


  • Cut the lobster tails in two along the length and take out the intestine
  • Brown the finely cut onions, the garlic, and the crushed ginger
  • Add the small pieces of diced tomato, herbs, and spices
  • Next add the lobster and one glass of water
  • Cook for 20 minutes while adding water if necessary
  • Sprinkle on some parsley just before serving
  • Accompany this dish with rice and broad beans



Recipe for Goose Civet

Ingredients : one goose, 1kg onions, 1kg soft ripe tomatoes, 1 bottle of red wine, garlic, salt, pepper, 2 cloves, thyme, parsley, scallions

Directions :

  • Fry the pieces of goose
  • Add 1kg of onions
  • Add the crushed mix: garlic, salt, pepper, cloves
  • Add the diced tomatoes and thyme
  • Lightly brown
  • Add the wine an equal amount of water
  • Cover and let simmer on a medium flame for a good hour
  • Finally, sprinkle on parsley and scallions. Accompany with rice, broad beans, and mango rougail


Recipe for Christmas Log

Ingredients : 1 kg sweet potatoes, 250g butter (sovaco), 100g sugar, 1 sachet of vanilla flavoured sugar, a little liquor (anisette or Marie Brizard), 3 eggs

Directions :

  • Boil 1kg sweet potatoes
  • Peel and crush them
  • Mix with 250g butter, 100g sugar, 1 bag of vanilla flavoured sugar, a little liquor, 3 eggs
  • Place in log shaped mould and glaze over with egg yolk
  • Bake in oven for 30 minutes at 180°C
